What we are really getting at is that it tastes differently depending on what you get your hands on. The color of honey is essentially determined by two factors. The first and most obvious is that the nectar properties which the bee's come in contact with are unique to a particular flower. Additionally, whether a given batch of honey has been heated or filtered will have a noticeable effect on the color and texture.
